Raisin Pineapple Muffins

Try something for breakfast. Top with a little peanut butter or cottage cheese for a satisfying meal.

Ingredients

  • ½ cup brown sugar, packed
  • 3 T. margarine
  • 1 egg
  • ¾ c. pineapple juice
  • ½ tsp. grated orange peel
  • 2 c. all-purpose flour
  • 1 ½ tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. ground cinnamon
  • ½ c. raisins

Directions

  • Beat sugar and margarine until light and fluffy.
  • Beat in egg, juice and orange peel.
  • Combine remaining ingredients; stir into juice mixture until moistened.
  • Spoon batter into 12 muffin cups coated with nonstick pan spray.
  • Bake at 375 for 18 to 20 minutes.
  • Cool on rack; serve warm.

Yield: 12 muffins
