Ingredients
- ½ cup brown sugar, packed
- 3 T. margarine
- 1 egg
- ¾ c. pineapple juice
- ½ tsp. grated orange peel
- 2 c. all-purpose flour
- 1 ½ tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. ground cinnamon
- ½ c. raisins
Directions
- Beat sugar and margarine until light and fluffy.
- Beat in egg, juice and orange peel.
- Combine remaining ingredients; stir into juice mixture until moistened.
- Spoon batter into 12 muffin cups coated with nonstick pan spray.
- Bake at 375 for 18 to 20 minutes.
- Cool on rack; serve warm.
Yield: 12 muffins
